A new specialty food manufacturer has
recently opened to the public in Atlanta's Westside area. That's great news for
Atlanta foodies whose love for fine food doesn't match their leisure time to
create it. Paulsen Foods, owned by food entrepreneur Russell Paulsen, will definitely answer the question, “What's for dinner?”
Paulsen Foods is conveniently located on Donald Lee Hollowell Parkway close to
the specialty food shops on Howell Mill Road. Paulsen's offerings include
many of the same dishes listed on a Four Star restaurant menu; Handmade Lump Crabcakes, Quail Wellington, Maine Lobster Cakes, Georgia Wild Shrimp Cakes, Salmon Oscar, individual Seafood Newburg Pies in ramekins and Braised Beef Pot Pie. Paulsen's butcher shop features aged Choice hand cut beef, double cut pork chops, Mariah smoked bacon and Bourbon Marinated Flank Steak. Fresh seasonal fish, wild caught shrimp and Alaska king crab legs are also available.
All of Paulsen's products are produced in small batches using the best quality
ingredients available. Many of Paulsen's appetizers are frozen for convenience;
great to keep on hand for food and entertaining emergencies. Ever mindful of
busy contemporary lifestyles the shop also carries fresh Georgia vegetables and
flowers to complete the dining experience.
Russell Paulsen worked in fine dining during his teen years and early twenties.
On a trip to Bimini Island he fell in love with the local people and their laid
back lifestyle centered on fresh seafood and especially, conch. Paulsen worked
in a dirt floor kitchen with a lovely elderly island lady to develop a recipe
for the world's best conch fritters. Paulsen later founded Bimini Island Seafood
where he developed recipes for the restaurant trade not only conch fritters, but
also crawfish, shrimp and alligator. Riding on great success of Bimini, Paulsen opened his signature store, Paulsen Foods, in 2006. After establishing
itself in the wholesale business Russell Paulsen was questioned frequently about
retail sales of his products and decided to open to the public starting in September 2007.
